  • 1 egg
  • ¼ cup of sugar
  • ¼ cup of sunflower oil
  • zest of one lemon
  • juice of half a lemon
  • 1⅓ cup of self-rising flour
  • Step 1: beat the egg with the sugar and lemon zest, once integrated all add the sunflower oil and mix again until all the ingredients are integrated.
  • Step 2: Add the sifted flour in 3 batches. After integrating the first batch; Add the lemon juice, integrate and continue adding the flour.
IMPORTANT‼️ do not knead, just integrate enough so that there is no dry flour left, the key is not to manipulate the mixture too much.
  • Step 3: Let stand for 15 minutes in the fridge, at the same time preheat the oven to medium temperature.
  • Step 4: Make balls of the dough of approximately the same size, not too big because they will grow later. Put them on a tray with parchment paper or oiled and floured.
note: the cookies will grow, so it is better to leave some separation between each one so that they do not come together when baking.
  • Step 5: Bake at minimum heat or 180°C, remove them once the cookie base is lightly browned.
